[ I. THE STORY ]
Vespera was born from an uncompromising obsession: to treat the Neapolitan pizza not as casual fare, but as a sacred culinary blueprint. Nestled in the heart of Healdsburg, our boutique dining room holds only five tables, accommodating just twenty guests a night.
Chef-owner Giovanni Rossi spent a decade studying wood-fired thermodynamics in Campania. Every dough batch undergoes a rigorous 48-hour cold fermentation process, utilizing purely stone-milled organic flour and natural spring waters to build a complex, airy crust.

[ II. THE PILLARS ]
We source only the rarest D.O.P. ingredients from the rich volcanic soil of Mount Vesuvius to the lush organic pastures of Sonoma.
Sun-sweetened heirloom plum tomatoes grown strictly in volcanic soil surrounding Mount Vesuvius. We hand-crush every batch daily to retain structural moisture, avoiding mechanical blades that aerate and spoil the natural volcanic sweetness.
Spun fresh daily by local Sonoma artisans utilizing rich cow's milk. The water content is strictly controlled so it melts cleanly without puddling on the thin crust.
Aged Prosciutto di Parma sliced paper-thin so the delicate fat marbling melts instantly upon stone oven contact.
Cold-pressed extra-virgin olive oil infused with rare winter white truffles from Umbria, paired alongside organic Sonoma wildflower honey slow-infused in-house with hand-crushed Calabrian hot chili peppers.

We operate only five physical tables. Giovanni Rossi designs Vespera to be an intimate sanctuary, ensuring he inspects and hand-shapes every single Neapolitan crust. Mass production compromises fermentation consistency.

Standard commercial pizzas rise in under 2 hours, resulting in heavy, yeast-dominated doughs. Vespera slow-matures the organic flour using cold refrigeration for exactly 48 hours. This allows natural enzymes to break down starches, creating a highly digestible, incredibly light, bubbly, and complex Neapolitan crust.
Neapolitan pizza is designed to be eaten within minutes of leaving the Stefano Ferrara brick oven. Because cold cardboard ruins the blistered, fragile crust, we do not partner with delivery platforms. However, we offer structured pre-order dispatch pickups directly through our digital cart gateway.
Authentic Neapolitan pizza relies strictly on stone-milled wheat flour containing gluten to stretch without breaking. While we offer vegetarian and garlic options, we currently do not produce gluten-free dough alternatives in our wood-fired hearth.
We curate a boutique cellar containing classic Italian red wines (such as DOCG Chianti Classico and Brunello di Montalcino) alongside Sonoma County's finest local Pinot Noirs and Chardonnays, paired specifically to match hand-crushed tomatoes and truffles.
We encourage smart casual attire. Vespera is an expensive, intimate setting designed for comfortable reverence. We ask guests to dress respectfully to match the fine dining atmosphere of our candlelit room.
Our service flow is intentional and slow. Guests typically spend between 75 and 90 minutes enjoying wine, Neapolitan craft signatures, and house gelato. We pace our reservations to allow each guest absolute, unhurried ease.
